CHOCOLATE COOKIE BANOFFEE

INGREDIENTS

(8 servings)

    • 100 g heavy cream 35%
    • 1 banana

For the crust:

    • 200 g Grecian Living cocoa biscuits
    • 40 g butter

For the dulce de leche:

  • 90 g butter
  • 1 can sweetened condensed milk
  • 50 g brown sugar
  • 15 g chocolate

PROCESS

  1. To make the crust, pulse the biscuits in a food processor.
  2. Melt the butter over low heat.
  3. Remove the butter from the heat, add the biscuits, mix, place in a pan.
  4. Place the pan in the fridge for 20minutes.
  5. To make the filling, melt the butter and brown sugar over low heat until the sugar is completely dissolved.
  6. Add the sweetened condensed milk. Bring to a boil and continue boiling for 5 minutes over medium heat, stirring constantly until the filling takes on a dark colour.
  7. In half the amount of cream dulce de leche add the chocolate and mix to incorporate.
  8. In bowls place the biscuit mixture, which break into pieces, pour the cream with chocolate and place in the fridge for one hour.
  9. Remove from the fridge the bowls.
  10. Cut the banana in slices and scatter them over the filling.
  11. Pour the rest of the cream dulce de leche.
  12. Serve with whipped cream topped with chocolate shavings.
