MEAT SOUP WITH FILINI

INGREDIENTS

(2 servings)

  • 80 g Grecian Living filini
  • 300 g beef fore shank, cut in big pieces
  • 2 cucumbers, cut in large dice
  • 1 carrot, cut in large dice
  • 2 potatoes, cut in large dice
  • 50 g leek, cut in large dice
  • 1 onion, cut in large dice
  • 60 g celeriac ginger
  • 25 g oil
  • salt, pepper

PROCESS

  1. Put the meat in a pot and add water until covered.
  2. Place the pot over medium heat.
  3. When it comes to a boil, skim the froth forming on the water surface until it stops. Let the meat simmer for 35 minutes.
  4. Add the vegetables, olive oil, salt and pepper.
  5. Stir and simmer for 30 minutes.
  6. Remove the vegetables and add the pasta. Stir and let simmer for another 10 minutes.
  7. Process vegetables with a hand mixer until smooth and add back to the pot.
  8. Stir and remove from heat.
  9. Adjust salt and pepper and serve in deep plate.
  10. Garnish with grated ginger.

TIPS

  • A rich dish that can be accompanied with pihtogalo, a cream cheese from Chania.
  • You can serve it with croutons. (You will need 2 slices Grecian Living toast bread with no added sugar, cut in small cubes, olive oil, salt, pepper, oregano and thyme. Bake at 180° for 20 minutes).
