ROAST CHICKEN WITH FILINI

INGREDIENTS

(2 servings)

  • 1 cup Grecian Living filini
  • 1 chicken fillet
  • 1 tomato
  • half an avocado
  • olive oil
  • salt, pepper
  • 4 g parsley
  • 2 g fresh mint
  • 1 teaspoon balsamic vinegar
  • oregano
  • 1 teaspoon mustard, prepared
  • 1 teaspoon yoghurt
  • zest of half a lemon
  • zest of half an orange

PROCESS

  1. In a bowl place the chicken fillet, mustard, salt, pepper, 2 tablespoons olive oil, lemon and orange zest, juice, yoghurt, parsley and oregano.
  2. Cover with plastic wrap and place in the fridge.
  3. Blanche the tomato, peel, discard the seeds and cut in small dice.
  4. In a bowl place the tomato, and 1 tablespoon olive oil, salt, pepper, oregano, mint, parsley, balsamic vinegar and mix to combine.
  5. Cover with plastic wrap and place in the fridge.
  6. Wash the filini and boil in salted water with 1 tablespoon sunflower oil.
  7. Boil for 7 minutes, stirring often.
  8. In a bowl with cold water, add the filini and stir. Take the filini out of the water using your hand and add to the marinated tomato. (You can add the filini separately).
  9. Roast the chicken directly on the oven rack.
  10. Cut the avocado in slices.
  11. Assemble and serve.
