KOUROU MINI CHEESE PIES WITH CHIOS MASTIHA BREADSTICKS

A recipe for kourou cheesepies with a scent of mastiha using Grecian Living mastiha breadsticks

INGREDIENTS

(20 servings)

  • 1 package Grecian Living Chios mastiha breadsticks
  • 350 g gluten free flour
  • 1 egg
  • 2 egg yolks
  • 50 ml olive oil
  • 120 g feta cheese
  • 100 g anthotyros cheese
  • 120 g yoghurt
  • salt, pepper, powdered nutmeg
  • sesame seeds

PROCESS

  1. Pulse the breadsticks in the blender until powdered.
  2. In a bowl mix the flour, breadsticks, olive oil, yoghurt and egg and knead until well combined. Cover with plastic wrap and leave for 30 minutes.
  3. Break the cheeses by hand in small pieces.
  4. Add 2 tablespoons yoghurt and 2 tablespoons breadstick powder and mix.
  5. On the kitchen counter spread parchment paper. Apply olive oil to your hands.
  6. For each mini pie, roll out a small quantity of dough into a circle on your hand or on the parchment paper using a rolling pin.
  7. Place 1 teaspoon of filling in the centre of the circle, cover with the dough and press the edges with a fork in order to prevent the filling from spilling out when baking.
  8. Line a pan with parchment paper and arrange the mini pies.
  9. Add few drops of water to the egg yolk and mix. Brush the pies with the mixture.
  10. Sprinkle with sesame seeds.
  11. Bake in preheated oven at for 25 minutes.
