SWEET PIE WITH CHIOS MASTIHA COOKIE

INGREDIENTS

(10 servings)

  • 90 g Grecian Living Honey and Chios mastiha breadsticks
  • 1000 ml milk
  • 80 g butter
  • 3 eggs + 1 egg yolk
  • 100 g sugar
  • 20 g corn flour
  • 80 g cornmeal
  • 50 ml water
  • 2 tablespoons orange flavored sugar
  • 1 vanilla flavoring
  • zest of half an orange
  • salt

PROCESS

  1. Heat a deep pan over medium heat. Add the milk and sugar and bring to a boil.
  2. Thoroughly whisk the eggs, vanilla, zest and salt by hand. .
  3. Slowly add the hot milk to the egg mixture, stirring constantly.
  4. Place mixture in the pan.
  5. Add the cornmeal and corn flour.
  6. Stir constantly until the mixture thickens.
  7. Remove from the heat, add the butter and mix until it melts.
  8. Grease a glass baking dish and sprinkle with semolina. Pour the mixture in the pan and spread evenly with a spatula.
  9. Preheat oven to 180ο C at fan-forced setting.
  10. Mix the water with the orange flavored sugar.
  11. Brush on the pie and bake for 45-50 min.
  12. Melt the butter in a frying pan.
  13. Pulse the breadsticks in a food processor.
  14. Add the butter and mix.
  15. Place the breadsticks mixture in a pan lined with parchment paper and place in the fridge.
  16. Serve the pie sprinkled with confectioner’s sugar, ground cinnamon and the breadstick cookie.
