PENNE WITH FRESH SALMON AND ASPARAGUS

INGREDIENTS

(3-4 servings)

  • 240 g Grecian Living penne
  • 200 g fresh salmon
  • 1 scallion
  • 15 g asparagus
  • 7 g dill
  • salt
  • pepper
  • 30 g vodka
  • sesame seeds
  • 4 tablespoons olive oil

PROCESS

  1. Boil the pasta in salted water for 12 min.
  2. Drain and rinse the pasta and add some olive oil while stirring.
  3. Cut the salmon in small cubes.
  4. Finely chop the scallion and dill.
  5. Trim the asparagus, removing the hard bottom part at 2 cm from the edge.
  6. Heat a frying pan over medium.
  7. Add the asparagus and cook for four minutes until soft.
  8. Add the salmon and cook, turning until it is sauteed throughout. Add the scallion.
  9. Add vodka and cook until alcohol is reduced.
  10. Add the boiled pasta.
  11. Add half a glass of water and cook over high heat until the sauce thickens.
  12. Remove from the heat and season with salt and pepper.
  13. Add the dill and mix.
  14. Serve with sesame seeds.
