SAVORY CHICKEN TART WITH CHEESE (CAROB BEAN BREADSTICKS)

A tasty and crumbly tart with Grecian Living cheese or carob bean breadsticks

INGREDIENTS

(12 servings)

For the crust:

  • 450 g all-purpose flour
  • 200 g butter at room temperature
  • 200 g yoghurt
  • 1 egg
  • salt
  • 7 Grecian Living cheese/carob bean breadsticks, crushed

For the filling:

  • 60 g red bell peppers
  • 60 g yellow bell peppers
  • 250 g heavy cream
  • 100 g graviera cheese, grated
  • 1 scallion
  • 7 g parsley
  • 7g fresh mint
  • 250 g boneless chicken
  • 3 eggs
  • salt, pepper, nutmeg
  • butter, cold

PROCESS

For the crust

  1. Place all the ingredients in a bowl and knead to get a smooth dough.
  2. Shape the dough into a ball and place in a greased tart pan. Press the dough with the palms of your hands and then spread it with your fingers until it evenly covers the bottom and sides of the pan. Cut off any remaining dough.
  3. Lightly prick with a fork and leave it in the fridge for one hour.
  4. Bake for 15 minutes in preheated oven at 180

For the filling

  1. Cut the chicken in thin strips and the peppers in small cubes.
  2. On high, heat the frying pan with some olive oil. Cook the chicken for 6 minutes. Add the peppers and cook for 3 minutes. Sprinkle with salt and pepper. Remove the pan from heat and leave it to cool.
  3. Chop the mint, parsley and scallion.
  4. Break the eggs into a bowl and add the scallion, mint, parsley, heavy cream and nutmeg and sprinkle with salt and pepper. Whisk until well combined.
  5. Place the chicken strips all over the crust.
  6. Add the grated cheese.
  7. Slowly add the liquid mixture. Top the tart with three pieces of cold butter.
  8. Bake in preheated oven at 180, at fan-forced setting for approximately 15 minutes. Change the setting to conventional and continue baking for another 15 minutes, until the surface is golden and the cream is thickened.
  9. Leave the tart for 20 min until cooled down and firm. Sprinkle with crushed breadsticks (optional). Cut into pieces and serve.

You can either add crushed breadsticks to the tart crust, as described above, or make the crust without breadsticks and sprinkle with crushed breadsticks before adding any of the filling ingredients. In the second case bake for 25 minutes at fan-forced setting and another 20 minutes at conventional setting.
